We’ve heard about the low carb movement.

This is how I’ve put together my paleo plate. I’ve read a book called Primal Body, Primal Mind by Nora Gedgaudas about 5 yrs ago and it just makes sense. She makes the case of moderate amount meat, she doesn’t promote excess meat, which I think it’s smart, especially with sustainability issues.

The Paleo Plate

  • Palm size piece of meat or seafood
  • Abundant of colorful vegetables (Above th eground preferably)
  • Enough dietary fat to satiate in the form of avocados, olives, nuts, seeds, eggs, if tolerated and the most natural fat from animals.
  • Add fermented vegetables and fermented beverages (Kombucha) for good gut health as well as daily bone broth.
  • Herbs and spices to round it up.

Bone Broth

As a chef, the first thing I learned in culinary school was how to make a broth. Bone broth is good for the gut and delicious. First culinary training starts with flavor. Chefs have as much nutritional training as doctors.
